I love the versatility of Alphabet books- especially in upper elementary. I use them all the time for reviewing science or social studies content, making math vocabulary 'dictionaries,' and even for Mother's Day or Father's Day gifts. Kids can keep their spelling or vocabulary words in the books, or they can research a topic and write their own alphabet books. I usually print them single-sided, because it's less work for the students if they make a mistake. But if you want to save paper, they can definitely be made two-sided. Or, print it really big and make a class book!
